Beaten egg whites - the bowl must be perfectly clean ( no grease or fat ) and dry. always remember to remove the cap to allow air into the mixture. use eggs at room temperature, run BEATEN EGG WHITES if you want your to be frothy, if you want a firmer texture, run BEATEN EGGS WHITES at speed 7.

Whipped Cream - always use full fat double cream - refridgerate with the whisk for 30 mins beforehand, pour in cream and icing sugar - run EXPERT 2 mins 30 secs Speed 7 without Heating and without the cap to allow air in.

Sorbets -  fit the whisk (after using the FROZEN DESSERT programme with the main blade) for a fluffier result Run on EXPERT 30 secs on speed 6 without heating.

Swiss Meringues - put all ingredients in a clean bowl - take cap off lid - run BEATEN EGG WHITES 10 mins speed 5 at 50C

NEVER EXCEED SPEED 7 nor 110C or you can damage the whisk. Do not add Hard ingredients that stop the whisk moving.
